Chef Paul Liebrandt makes a guest appearance at The Greenhouse
Liebrandt joins executive chef Alex Dilling to create a four-Michelin-starred feast for one day only at Mayfair’s The Greenhouse
There can be few chefs who have appeared in an Emmy-nominated documentary, but Paul Liebrandt, the two Michelin-starred maestro and subject of HBO’s 2011 A Matter of Taste – Serving up Paul Liebrandt, counts this feat among his many accomplishments. Eight years on, he is making an equally intriguing appearance as guest chef at Mayfair’s two Michelin-starred gastro destination The Greenhouse, where for one day only – Sunday May 19 – he will collaborate with executive chef Alex Dilling to create a special lunch and dinner (priced £250 per person) showcasing the duo’s signature dishes over eight courses.
Both experiences will begin with king crab, green almond, verbena and shiso, followed by foie gras noir, avocado and Hana Ho with caviar. Guests will then be treated to white asparagus, razor clam and Lampong pepper, before samling Cardinal prawns. Next, the chefs will serve a new twist on the Fabergé egg: smoked sturgeon and Cornish turbot with kaffir, wild spring garlic and celtuce; and duck maison burgaud and challandais au sang. Diners can expect a novel end to the meal – a combination of apple, olive oil and wasabi for dessert. Tempting wine pairings are available (priced £105 per person), including the Riesling Spätlese, W Dr. Thanisch, Bernkasteler Doctor 2015; Sancerre Les Herses, Alphonse Mellot 2016; Châteauneuf-du-Pape Barbe Rac, Michel Chapoutier 2014; and a Moscatel Cuva Vella Raim, Bodegas from Valencia. A premium wine selection will also be available, priced £250 per person.
