Padella opens from the Trullo team

A “community of pasta” in Borough Market

Vaulting from the success of Trullo in Islington, proprietor Jordan Frieda and chef Tim Siadatan (second picture) are heading to Borough Market to open their second restaurant, Padella, a no-reservations restaurant that will headline homemade pasta, this week.

The menu will be made up of eight of the most popular pasta dishes from the Trullo menu, such as pappardelle with eight-hour beef-shin ragu (first picture); tagliarini with brown shrimp, and green and yellow courgettes; squid ink tagliarini with mussels, chilli and oregano (third picture); rabbit tortellini in broth; and ravioli of pumpkin and marjoram with sage butter. All pasta will be made in the window of the restaurant just before service commences to be as fresh as can be – and entice in hungry passers-by.

Starters are to include deep-fried Venetian meatballs, burrata with Tuscan olive oil and bruschetta with baked borlotti beans and salsa rossa. To follow the pasta main course, Frieda and Siadatan have concocted three delicious puddings, salted caramel ice cream, pear and almond tart, and tiramisu.

The reason for this passion for pasta? A love of the Italian wonder-stuff but also a gap in the market. “London already excels at pizza,” says Frieda, alumnus of The River Café. Now it’s time for Italy’s other peasant food, high-quality handmade pasta, to step into the spotlight.

Already a mecca for food, Borough Market restaurants will undoubtedly see some healthy competition in the new “community of pasta” at Padella.
