A one-off Krug-paired menu at Murano
Five courses of champagne and spring delights
Angela Hartnett is one of the most celebrated modern British chefs. Indeed, just four months after opening her Mayfair restaurant Murano as chef proprietor in 2008, she was awarded a Michelin star – followed by four AA rosettes.
So it is only fitting that Murano should team up with other highly esteemed makers and marques. Enter Krug, which is collaborating on a five-course champagne-paired tasting menu (£185) designed by Hartnett and Murano head chef Pip Lacey. Taking place on Wednesday May 20, the evening will be hosted by Julie Cavil, winemaker from the House of Krug.
Murano’s strict policy of using only the freshest and most seasonal ingredients means the menu is shrouded in mystery at present – the second week of April will see Lacey taste spring’s finest offerings and devise her dishes. Quite right for any chef who knows their Maldon salt. But intelligence suggests that two of the tempting dishes will be veal sweetbreads with potato gnocchi, broad beans, peas, green apple and hazelnuts, and lamb rack with spiced aubergine purée, spring onion and dates – classic Murano combinations of modern Italian flair and locally sourced gourmet finery. As for the Krug parings, hints are that Krug Grande Cuvée will feature prominently on the sommeliers’ menu. So much to confirm, perhaps, but booking ahead is essential.
What a culinary courtship of cuisine and champagne – one that’ll crack open the summer season with a pop.
